These baked chicken patties make quick meal prep and are a great alternative to red meat. And they’re gluten free and FODMAP friendly!

Chicken patties are fun to eat; they’re like cookies! But I’m not a fan of standing over a stove and individually frying them up (who’s got time for that?!). So I bake them (like cookies).

This recipe uses hemp hearts as the binder/thickener instead of breadcrumbs, keeping it gluten free and low fodmap. It also has the added bonus of boosting this recipe with omegas 3 & 6 fatty acids, magnesium, iron, fibre, folate, vitamin E, potassium and phytosterols (read more about the benefits of hemp here).

Meal Prep Ready!

This recipe is great for preparing ahead; just bake fully and freeze when cool. For best texture use within 2-3 months, but they’ll still be good long after. Remove from freezer and re-heat in oven or microwave.

Ingredients
  • 1 pound ground chicken
  • 1 egg
  • 1/4 cup almond milk
  • 6 Tbsp. hemp seeds
  • 1/2 tsp black pepper
  • 1 tsp parsley flakes
Instructions
  1. Preheat oven to 350o F

  2. Line a baking tray with parchment paper
  3. Combine all ingredients
  4. Drop tablespoons of mixture onto prepared tray and form patties

  5. Bake for 40 minutes, remove from oven to cool.
Recipe Notes

Can be frozen for 2-3 months. Remove from freezer and reheat in microwave or oven.
