The make-ahead muffin your breakfast needs!

Servings: 12 muffins
  • 1 cup flour
  • 1/2 cup chocolate protein powder I used Hemp Yeah! protein powder
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup sugar
  • 2 eggs
  • 3/4 cup milk of choice
  • peanut butter optional
  1. Preheat oven to 325 F

  2. Stir together all the dry ingredients

  3. Add in eggs and milk. Stir until combined

  4. Pour into small muffin tins

  5. Drop a dollop of peanut butter (if using) onto each muffin, and swirl in with a knife or toothpick. Add in any other desired fillings

  6. Bake for 20 minutes

  7. Allow to cool before removing from tins

Freeze in individual bags and defrost as needed
