Snacking is always essential, but summer’s longer days and relaxed schedules give them added importance. These Greek Yogurt Blueberry Hemp Bites are just what the weather ordered! They’re refreshing, satiating and satisfying. And that gorgeous blueberry colour- don’t they just look summery?

 

The yogurt and fruit combination fit all the criteria for building the perfect snack. And this is an easy and hands-on recipe to get the kids involved (sticky fingers included).

Using frozen blueberries means you can enjoy this all summer-long (and beyond) even when it’s not blueberry season, but if you have too many fresh (never a problem in my house!) you can definitely use them.

A yummy summer treat that's easy to make and fun to eat plus loaded with nutrients!

Ingredients
Topping:
  • 4 tbsp hemp seeds
  • 1.5 tbsp honey
Yogurt Mixture:
  • 5 oz plain Greek yogurt
  • 1 tbsp lemon juice
  • 1 tsp honey
  • 1 cup blueberries frozen
Instructions
  1. Combine hemp and honey and mix well. Set aside

  2. Add all yogurt mixture ingredients to a blender

  3. Blend until all ingredients are well combined

To assemble:
  1. Divide hemp mixture evenly into mini silicone ice cube tray. Press down with spoon or wet fingers

  2. Pour yogurt mixture into molds on top of the hemp

  3. Place in freezer and allow to freeze at least 2 hours

  4. Remove from mold so hemp mixture is on top. Serve immediately. If returning to freezer, make sure bites are well covered.
