Sweet potato bites make a filling snack while presenting like an elegant appetizer. They’re quick and easy to make- no baking skills required!

I love sweet potatoes. And I’m a huge fan of canned beans. So it really was only a matter of time before I put them together. And let me be the first to announce it as a winning combination. This is the perfect snack for all ages; it’s got protein (beans), carbs & fibre (sweet potato & beans), and cheesy goodness! It’s also super simple to make.

Microwave a sweet potato or 2, or more, open a can of beans, slice the potato, spoon on some beans, top with cheese, pop in the oven to melt the cheese and voila! you’ve got an impressive hors d’oeuvres for some lucky guests 🙂

Sweet & savoury 2-bite sweet potatoes are an easy party addition and exciting after-school snack!

Ingredients
  • 1-2 medium sweet potatoes look for ones that are long & skinny
  • 1 can baked beans
  • sprinkle cheese
  • oregano
Instructions
  1. Microwave sweet potato for 4-8 minutes, depending on size. It should be fully soft 

  2. When cool enough, slice sweet potato into medium thick slices

  3. Place slices on baking tray. Spoon beans on top of sweet potatoes

  4. Sprinkle cheese on top

  5. Broil or bake on high for 5 minutes until cheese is melted

  6. Sprinkle with oregano and serve
