Blueberry baked oatmeal is super simple to make, can use fresh or frozen berries, and is a filling & satisfying food for anytime.
You may not thing of oatmeal as a kid friendly food, but when it’s looking like cake and combined with some favorite ingredients, what’s not kid-friendly about it?
*Disclaimer; this is not cake, and passing it off that way to your family will be disappointing to them (and you when they don’t eat it). If you’re familiar with me, you’ll know I don’t encourage “sneaking in” ingredients or tricking kids about food, as it breeds mistrust around eating and can harm the parent/child relationship. But I do like food that looks like cake or cookies because they’re just so much fun to serve and eat!
Now back to this recipe. Oats are a filling grain that is really easy to personalize with your favorite fillings and toppings. Baked oatmeal is simple to throw together, so it’s great to include your kids in making it (or let them do it alone if they’re older).
This recipe uses frozen blueberries; you can use whatever fruit you have on-hand, make a combination of berries, or toss in some chocolate chips.
Quick and easy, nourishing & filling!
- 2 cups oats
- 1/4 cup brown sugar
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1 tsp lemon juice
- 1 egg
- 2 cups milk of choice
- 1/2 cup berries of choice

In a 8x8 baking dish, stir together oats, baking soda, salt & brown sugar

In a separate bowl (or measuring cup), combine milk, egg, and lemon juice

Pour the liquid mixture into the oat mixture

Add in the berries (or other toppings you're using). You can stir them in, or leave them on top of the mixture

Bake at 350 F for 45 minutes. Lower to 300 F for the last 20 minutes if starting to brown

Remover from oven and allow to cool
