Gluten free, dairy free, and FODMAP friendly, this spinach quiche is a terrific veggie side to add to any meal

Ingredients
  • 1 bunch spinach
  • 3 eggs
  • 1/4 cup almond milk
  • 1 tsp salt
  • 1/8 tsp black pepper
  • 1/8 tsp mustard powder
  • 1/8 tsp paprika
  • 1 to mato for decoration
Instructions
  1. Preheat oven to 350℉. 

  2. Puree spinach well

  3. Add in all other ingredients and mix well. 

  4. Pour into an 8 inch square pan. Top with tomato slices. 

  5. Bake for 30 minutes, remove from oven to cool
